As the seasons shift and the Somerset countryside glows with autumn colour, it’s the perfect time to enjoy warming, comforting bakes.

One of our favourites here is the Tarte Tatin – a French upside-down apple tart that’s simple, elegant and packed with flavour.

This dessert is ideal for showcasing fresh, Somerset apples – and we grow those in our orchards.

WHAT YOU’LL NEED:

6 firm dessert apples (we grow and sell Katy)

150g caster sugar

75g unsalted butter

250g ready-rolled puff pastry

Optional: a splash of vanilla extract or a pinch of cinnamon for added warmth.

HOW TO MAKE IT

PREP THE APPLES: Peel, halve, and core the apples.

MAKE THE CARAMEL: In a heavy-based ovenproof pan, melt the sugar over medium heat until golden. Stir in the butter until smooth.

ADD THE APPLES: Place the apple halves cut side up into the caramel. Cook gently for 10–15 minutes until they begin to soften.

TOP WITH PASTRY: Lay the puff pastry over the apples, tucking the edges down the sides of the pan.

BAKE: Transfer to a preheated oven at 190°C (170°C fan) and bake for 25–30 minutes until the pastry is golden and crisp.

FLIP AND SERVE: Let the tart rest for a few minutes, then carefully invert onto a plate. Serve warm with cream, custard, or ice cream.
